Seeing as Evolution is the standard ubuntu mail reader, something that
fits in with that MUA would be fine. Right-click on the message and
select "Reply to list".

However, this option does not appear in the icon bar at the top, and I
don't know if it can be added.

I understand the Reply-To debate, and I elect to have my mailing lists
mung the Reply-To header to refer back to themselves, only when I want
to encourage discussions on the list.

I think that this -users list should encourage discussions :-) and
therefore should set Reply-To to refer to itself. If Evolution could be
fixed up to understand a user's preference for replying to a list in a
"better" fashion, that would be best!
