Any modern mail app can do this or they really should. At least the ones I
have used (Outlook 2000/Express, Thunderbird (think so didn't use that one
to much) and of course Evolution.

In Evolution--> Tools::Settings::Double click on the mail account (or
choose edit, you need to do this for each account)::Then choose the tab
Receiving Options::Message Storage --> enable checkbox "leave messages on
server".
