Close evolution. Select the log-out option (or whatever it's called).
In the resulting dialogue box click on the "save configuration" check
box. Next time you log-in Evolution won't be running anymore.

Want FireFox and Evolution to fire up automagically? Have both open
when you log-out, and click on said "save configuration" check box to
save your configuration.
