Server behaviour in Nautilus

I have a few ftp sites I regularly use and access with nautilus.
However, I'm a bit unsure how this really works.

When I enter the details for a server an icon appears on the desktop. Am
I actually connected to that server, even if I haven't got a nautilus
window open? The context menu (the right click one) has an unmount
option which would suggest that this is the case. 
Is it possible to have a menu or window with servers I can choose to log
into without them disapearing when I log out?

It's not a big problem, I'm mostly curious how this actually works as I
can easily fire up gftp.
