I haven't, but Jim Barrett (who I've Cc:ed on this email) is in New
Jersey and he's done work with Debian to develop a kiosk:

And has done a couple presentations about it for the PhillyLinux groups.
Debian, as you probably know, is the parent distribution to Ubuntu, so
it's administrated in a similar way (uses apt, similar configs, and
all that).
