Recommendations:

Boot the kiosks off of read-only media (think: CD or DVD).  Use a 
reasonably sized RAM disk for storing session data or any other R/W 
needs.  This way, you can even reboot the system in between users to 
ensure each user has a clean environment.

If you want them to know they're using Linux, make the default desktop 
art a big Linux penguin with the words "YOU ARE USING LINUX" in some 
48pt Impact font.  :-P
