If you want to get more people interested in Ubuntu I think a few packages
to add would be emerald theme manager with of course a bunch of themes,
compiz manager, ENVYNG and AWN (Avant Window Manager.) Maybe a couple of
cross platform games like Alien Arena and Nexuiz.

My two cents.
