For a while, Jeff Elkner and I were trying to cobble together an Edubuntu
Cookbook based on the Tuxlab Cookbook. Although now a bit long in the tooth,
the Tuxlab Cookbook was designed to show non-technical folks how to set up
an Edubuntu lab in South Africa. Ill see if I still have the PDF and other
info.

Not perfect, but a starting point.
