[Ubuntu Chicago] Server question

Quick question for you chicago nerds out there,

I recently finished my home network and realised I have an extra
computer lying around.  The goal is to turn this into a media server.
I need it to play nice with the Xbox 360, a windows 7 machine (Its not
mine, I swear I'm holding it for a friend...) and my Kubuntu box.  I
would like to be able to stream from my media server to the Xbox since
that is the one connected to the TV.

Whats the most painfree way to do this?  I should note that my router
is set up to DHCP and I don't know if it can handle static IPs (on the
router that is)....
