A friend of mine managed to get a nice little 5.25" hard drive caddy. 
IIRC it took 4 x 2.5" SATA hard drives.  It cost him about £60 from a 
seller on Amazon plus drives (IIRC he used 320GB 7200RPM Western Digital 
drives).

Not cheap but it went nicely in a MiniITX case.
