I theory, at least, the option in 8.10 to create a bootable pendrive will 
work with any bootable iso file.  I have bootable USB drives with 8.10 
and eeebuntu.  Having said that, I tried to do it with the 8.04LTS iso 
and although it came up with the live CD menu it wouldn't boot 
properly.  So I would say, give it a try with the server iso.  You can 
always use gparted to reformat the pendrive back if it doesn't work.
