Yeah, I know that the actual structure needs to be documented.

Feel free to ask me questions about it - that helps me: I find it 
difficult to document "from scratch", it is much easier if you (each of 
you diving into this!) tell how far you went on your own and where you 
lost it, and take it from there.

I recommend we discuss Git-based packaging at the OLPC Alioth list 
rather than your Edubuntu-specific list, to share knowledge also with 
non-Ubuntu packagers. :-)
