Hi,

I know is not obvious, but you have 2 options after opening the
"activites":
-Start writing right away the name of the program or file and it will
find it
-Click on the "applications" icon at the bottom of the dash, there you
can see all the installed apps.

GNOME UI's not very intuitive at first, but after a while you get used
to it. There are some useful extensions you can get for it at
extensions.gnome.org if you feel that the stock desktop is not usable
enough for you.

I hope I was of any help.
