Yeah for the host server I just do a regular server install.  You could then
select the tasksel option for a virtual host server at the end of
installation or what I do is just wait till it's installed and updated and
then do "sudo aptitude -R install libvirt-bin kvm python-virtinst".

I don't install any more packages than necessary on the virtual host and
keep any configuration changes to a minimum once it goes into production.
Since there will be multiple guest servers relying on the uninterrupted
operation of the host, I'm pretty strict about it.  But then I'm pretty
strict about install unnecessary software or config changes on all my
production servers whether guest or host.
