Most small businesses only need file/printer sharing and email. The
problem with giving small business owners a howto involving "apt-get and
edit /etc/pick-a-file" is that it will turn them off. Once the core is
installed they rest should be installed/configured via a web interface
even if it means you can't tweak every option.
