Question about repos on ubuntu server

What is a package selection? I thought adding an URL to sources.list
will add _all_ packages available on this URL to the list?

What happens if Dapper desktop gets a new kernel image and I'm running
the Dapper server version, how will apt differ the servers and choose
not to upgrade the kernel to desktop version?
