could you report a new bug and include what is printed on stdout on
first start of the thunderbird snap?

basically remove ~/snap/thunderbird, start thunderbird and see what is
printed

One potential reason could be that you don't have enough free space in
your userdir to copy the profile but it's difficult to say without the
log details...
