Sticking with the issue of Firefox starting maximized, this is not a
feature but something that must be wrong with your
profile/configuration. In my case it starts the same way I last closed
it, that is if I closed it not fullscreen it will start not fullscreen.

Now, on your grips with the Unity desktop, you can open specific bugs on
usability if you feel like trying to influence its design, or if you
want to stick with Ubuntu you still have "Ubuntu Classic" in the login
menu, or all the other flavors (Kubuntu, Xubuntu, Lubuntu, etc). So
plenty of choice. And of course there are other distributions.
