Ok one other thing you can try is:

1) remove all 'chrome' launchers from your dock
2) quit docky
3) (assuming you already moved the custom one into ~/.local/share/applications) rm -Rf ~/.cache/docky
4) restart docky
5) start chrome
6) right click on the chrome icon on docky and pin it

If this fails, you need to post 2 files to this bug:

1) /usr/share/applications/chromium-browser.desktop
2) ~/.local/share/applications/chromium-browser.desktop (the custom one)
