default runtime associations for execs seems random

I'm sorry for hitting the same issue again (regarding the exe in wine or in
mono issue), but i've found a very similar one but with wine vs fileroller.

Well, i installed wine from their daily build ppa, and it did install the
binfmts config:
dpkg -S /usr/share/binfmts/wine
wine1.5: /usr/share/binfmts/wine

but file-roller is still opening exe files by default. While 'Wine Windows
Program Loader' appears in the 'open with' sub-menu, i can't change the
defailt 'open with' on the properties to wine, since wine is not on the
list!
Something similar happens with jar files  file-roller vs java runtime.

Notice that at least in the wine case it's the same _after_ i installed
wine.
