Hi Christophe,
while not being part of the ubuntu doc team I still may be able to get you
kicked-off.
So this wiki page provides instructions on how to participate and
contribute in general:

And instead of building and working on the English version (examples):
./build/buildone.sh amd64 en "html pdf"
ls -la ./en
gedit ./en/hardware/supported/s390.xml
You may just work on the language version you want to focus on, like de,
it, pt_BR, etc.
Right now I don't see *fr* (according to your name and mail address I think
you might be interested in France), hence the French translation need to be
started from scratch ...
Probably best to copy the 'en' version, translate the content (keep the
file names in English) and add these files to bzr. Compare what you are
doing to the other languages that exist.
I assume that at some point in time minor adjustments in the build scripts
are needed to get a French version build, but that shouldn't be a big deal
...
