Welcome! It's great that you want to contribute. As for Rhythmbox, we are already finishing to edit the manual. May be we will need some fresh eye in the very end of the process, then we'll be happy to invite you. But there are many other tasks for the Documentation team. I'm rather a newbie myself to recommend something particular, but I think other folk would do it. A list of tasks for the system documentation can be found here:
