This is how my systems are setup also, and filesystems all except /boot are
LVM. Sadly, neither of these are really friendly to setup via the normal
livecd install method. But neither is terribly difficult to manage once you
realize that apt-get works in the livecd.
There was a reference (digg or slashdot) to a nice tutorial on encrypting
the home partition some time ago that finally nudged me over the edge and
made me try it out. I think this was the tutorial:
