Look at Ubuntu Customization Kit - http://uck.sourceforge.net
It has both GUI for simple customizations (changing language, installing
or removing packages) and possibility to use scripts for building live CD.

Just dump names of packages installed on hard drive into file, write a
script for UCK which will install all missing and remove all unnecessary
packages, and you're done :)
