If you delete the extended partition and create a new, larger one, and 
recreate the logical drives in it exactly as they were before, this will 
work to extend the logical partition without destroying the existing 
logical volumes.  Also try (qt/g)parted, it's excellent at reconfiguring 
existing partitions.

Simple... you didn't tell it you wanted the rest of the disk 
partitioned, so it did just what you asked.  Bear in mind that you might 
want the whole disk partitioned, but some people do not, so the 
installer can not force them to do so.
