You can boot "large" system with option "mem=240M". This will make Linux
use only 240 MB of memory.
I have been running some tests for Ubiquity memory usage during testing
phase. You can see my results here:

The results for Ubuntu are obsolete, memory usage AFAIK was improved
since then. But maybe there is still some problem.
On my page you can find scripts I have used to create graphs of memory
usage. You can run them to create graphs for current Ubuntu.
BTW. Please remember than opening _any_ application (including Gnome
terminal, file browser, etc.) when Ubiquity runs affects performance,
because it eats memory, which is very scarce during installation.
If you run the script, please run it from text-mode console.
