I'm missing something here. You've described how the themes get
installed - via dependencies - but you haven't described how the setup
is configured to use them.
Is it the case that Gnome themes automatically get used when they are
installed ? What if there are several ? How is the default chosen ?

In Firefox, the choice of which theme to USE is TOTALLY INDEPENDENT of
which theme(s) are INSTALLED. It is even possible to cause Firefox to
try to use, by default, a theme which is not installed. The
configuration is done in a file shipped in the firefox package.
If you deinstall firefox-themes-ubuntu from a default Ubuntu dapper
install the only reason Firefox works at all is that it has some kind
of fallback mode which arranges to use the built-in theme if the one
it's trying to use is missing from the system.
