ubuntu-desktop metapackage - options?

I don't think this is a good idea.

Conditional dependencies would mean more complex setups and more testing
for upgrades. Even current setups are hard to upgrade to the next
release, not to mention if there are multiple configurations to upgrade.

Life gets even more complicated if someone decides to switch from an
application to another, Lets say, prefer thunderbird over evolution.
This would mean that somehow the packages needs to depend on thunderbird
on systems that have evolution, this would mean that somehow the package
needs to depend on thunderbird on systems that have evolution, but still
allow thunderbird to be removed by the people who dislike it.

Best option you have is to create a patched alternative ubuntu-desktop
package with your own packages.
