Hi,

First thank you for working on that. Listing other preferred
applications is a known feature request upstream: 
http://bugzilla.gnome.org/show_bug.cgi?id=171871

Your mockup is rather technical, mimetypes are probably something users
don't know about and don't want to learn about. At the moment you can
change the default applications from the nautilus properties dialog. 
The current preferred dialog is not about mimetype but URI handlers like
http:. Writing a new application for who know what mimetype are and want
to tweak them would be an idea
