Thunderbird mail

No current e-mail system is really safe from government surveillance at this
time, because of data rentention laws which require e-mail service providers
to keep all stored such that government agencies have access to it whenever
they want. Just copying your e-mail on your computer will not help
in anyway for this. It just limits the access for yourself to one computer (
or as many as you regularly sync).
