Normally, it is recommended that the one-shot upgrade be done using
the upgrade-manager instead of these multiple smaller upgrades (I
assume using apt-get). The reason for this is that Ubuntu developers
do add some logic under the hood of updater-manager to deal with
typical scenarios and frequent problems that could arise during an
upgrade for one version to the next of Ubuntu. That logic may not be
there if you use the more generic update tools like apt-get or
synaptic.

Personally I have done a few 7.10 to 8.04 upgrades this spring, all
with the update manager, and they all went smoothly. Maybe it was
luck, but that's my personal experience. But I also try to keep my
systems relatively clean; minimize the package from the Universe
repository I use, very rarely use 3rd party packages, try not to mix
deb and ubuntu packages, etc.
