Hi Paul,
that's one of the thing that bothered me in the beginning (and still bothers
me!): looking for software equivalent to what you're used to on windows...
fortunately, there are lists that can point you in the right direction.
here's some URL's you will like:

there are other websites that list this kind of things which you can find
through some "googling" using keywords like "linux windows software
equivalent" and stuff like that.
and the sweet thing with ubuntu is that if you want to try the software, you
don't have to compile it from source code or other such geeky things. all
you have to do is open the Synaptic Package Manager (from menu System ->
Administration) and look for it, choose what software you want to try, then
hit the Apply button at the top, and enjoy!
