Hey, I'm currently faced with the same situation. My primary gateway is
a Ubuntu 6.06 LTS system with considerable data on the 120 GB HDD.
Moreover, it hosts my blog (not too important) and my Gallery2
installation (important). Ofcourse the amount of customization on squid,
samba and firewall is considerable too. In order to upgrade to 8.04 LTS,
i'm taking the following route:

1. Backup ALL data to an external drive
2. Backup SQL database for blog and gallery2
3. Backup configuration files of squid, samba and shorewall
4. Launch upgrade
5. If upgrade fails then clean install 8.04

This way, IF the upgrade breaks or fails, I should be able to re-build
the server. The guideline I use for any critical modifications is: what
do I need to do in order to reach this point incase the actions I take
break the system. My recommendation - do the same.
