It's not that they don't see it, or understand it. It's the fact that
it does actually say the words "subscription"  or "unsubscribe" at
all.

I find it interesting that I very rarely see requests asking how they
can unsubscribe, but instead ask the list to unsubscribe them instead.
This makes me think it's a cultural thing and that what seems obvious
to us, isn't to this range of people.

Adding a few extra bytes including the word "unsubscribe" to the
bottom of each mailing list is a tiny act that could solve an on going
issue. (or at least diminish it greatly).
