Indeed.

Don't use Evolution and want to get rid of it?
Want to install Xscreensaver and uninstall gnome-screensaver?
Foomatic causing printing problems and need to uninstall it until a patch is
released?

There are all sorts of potential cases where ubuntu-desktop can get removed
if you're not paying close attention (in fact, these have all happened to me
:)
