For recording, try either RecordMyDesktop (gtk package), or Kazam Screencaster.

If you want yourself to appear in a window in the recording, run
Cheese or Guvcview, at the time you are recording your desktop.

Of course, when you record your desktop, you can record Skype (or a
Google Hangout, which I prefer).

For video editing on YouTube, YouTube provides its video editor that
is suitable for the usual, simple stuff.
