I certainly think this can serve as a good preview while an ISO is pending.

For building an ISO like you are doing, I usually don't recommend using
the Lubuntu development PPA as packages like to break sometimes. ;)

You can use apt instead of apt-get. :)

lubuntu-restricted-extras works fine without pulling in extra Lubuntu
packages.

You should look at the depends of the lxqt and lxqt-core metapackages.
*Installing it currently bricks a system's networking, so don't use it
yet* , but it should serve as a good preview of what packages are in the
base install.
It has some applications in there, but we have a blueprint on
Launchpad[1] that has our current discussions for default applications.
