Travis, I take it you have 10.04 and you want to upgrade to 10.04.1? The
usual update/upgrade will take care of that. There is nothing more you
need to do.
Similarly, to upgrade from 10.04 to 10.10, just do a dist-upgrade.

I understand your issue with EE_PC. I have not used, though
experimented, with Unetbootin nor used EE_PC. There might be another
way to install, though.
If you make one or two additional partition, though some EE_PC have
small capacities, it would be good. Otherwise use a plain usb disk, but
installation will be slower (swap helps).
Boot that downloaded iso file (livecd, not alternate) using an
*existing* grub2 from an installed OS using "casper looping" and install
to a *different* partition from where the iso is located.
