I don't think anything will be removed if you remove the sun java
stuff since you have the openjdk installed which should satisfy the java
dependency. 

Otherwise, run the update-java-alternatives, make sure to set it to sun
java. Then set up the links manually.

My plugin links, in the /usr/lib/mozilla/plugins, type
ln -s 
/usr/lib/jvm/java-6-sun/jre/lib/i386/libnpjp2.so libjavaplugin.so
(all in one line, very important that you have the whole path, and not
relative paths)
