Yes it can, first create the new account and then import to it. If you 
want to be bulletproof in that, first backup her current profile, and 
after doing all the changes restore the backup. Given the amount of 
troubles that interfacing with Outlook and the rest seems to involve, 
I'd guess it's also the quickest solution :)
