sudo apt-get install xubuntu-desktop

at least this is what I did monthes ago.

What CPU are you using?

Otoh 2 gigs of ram look sufficent for me. Is your ATI supported by the 
official ATI drivers?

If not, you might consider getting a supported card. Personally I use 
nvidia because they work troublefree in Linux, at least for me, but this 
is surely debatable.

Anyway, with a decent "low end but supported by ATI/Nvidia drivers" 
ATI/Nvidia Graphics Card, you should be fine.
