Yes, definitely, using the alternate CD and Linux software RAID, with
one exception: you can't boot off a striped RAID partition to the best
of my knowledge.

First, is this some sort of motherboard RAID? If so then you are
probably short of luck. Investigate the 'dmraid' tool for your best
hope.
If you want to use Linux software RAID then yes: use the manual
partitioning option and:
1. partition all your disks to have the striped part you want.
-- include a small, separate boot partition (250MB)
-- don't forget swap
2. mark all those partitions as used as "Physical device for RAID"
3. Use the "Configure MD RAID" option, confirming that you want to
write the partition tables to disk.
4. Create your RAID arrays -- a mirror for the boot partition, striped
for the rest.
5. Return to the partitioning tool.
6. Select the mount point, file system type, etc for your RAID
partitions.
7. Accept the changes and go on.
