Actually, it appears this installer variant won't install to LVM at all,
even if you precreate the LV.

This is a feature request/WISHLIST item AND a bug report
FEATURE REQUEST:
It's pretty common (at least here) for us to format VM images with full-disk ("whole disk") LVM. Normally we have to drop to a shell and preconfigure that beforehand so I was super excited to see the new "Whole Disk" option in the new-style installer.
However, it doesn't have "LVM Physical Partition" as an option. I'm
genuinely puzzled by this because I would think it's an extremely
common pattern. I must be wrong.
We would really appreciate it if the default installer supported
whole-disk LVM physical partition. Also, considering how different
the interface is, this might not even be a d-i request any more but it
seems likely.
To clarify, this is the installer equivalent of a 'pvcreate /dev/sdb',
whereas the current workflow only supports a 'pvcreate /dev/sdb1'.
Using full disk LVM PV's makes expansion of disk (either iSCSI, VMDK,
etc) trivial.
BUG:
Please see attached screenshot. Even after pre-creating LVM lv's
(which is the normal way of handling this case), the installer does
not allow selection of those lvs as "partitions" for an install
target.
SORRY:
I now realize this is a known issue as per https://wiki.ubuntu.com/BionicBeaver/ReleaseNotes#Server_installer
however making the default install option for a *server* release not
support LVM seems...suboptimal.
