I know how to change the resolution after installation, but I am
wondering whether you can change it for the installation process.

  Screen resolution can not be changed

Status in “ubiquity” package in Ubuntu:
  Invalid

Bug description:
  In the installer for kubuntu 14.04 alpha 1, I can not change the
  screen resolution. This is a problem when installing in a virtual
  machine, and the installer chooses a resolution that is bigger than or
  the same size as the real screen, and I would like to run the VM in a
  non-maximized window.
