I don't now if this can help but.
Do your have the dhcp server on a other server ?
I find that removing the ip addres in boot option can be troubel.
In edu 6.06 a have to use the full ip ex 192.168.0.3:/opt/ltsp
but in edu 6.1 a use only :/opt/ltsp

The problem is at his stage, the client stops booting....
Freeze on the Ubuntu logo, first part of the progress bar :(
