Sabayon and Edubuntu Feisty...change menus

Ok...I've gotten Sabayon to work...for the most part.  One thing that
doesn't seem to work is changes to the panels.  I'd like to be able to set
the default size of a panel to be at least 32 (on 1280x800 monitors the
default 23 can be quite small)....and also be able to have some launchers
on the panel by default.  Is this possible or am I missing something?

What I do have working is the ability to "globally" add menu items....and
desktop launchers.  It's the panels I want to fix now.  Ideas?
