Since recommendations are being made, you may want to look at:

I was quite impressed with their Open Source Lab at the
National Educational Computing Conference (NECC) in San Diego
last month.  It really showed the masses what can be done with
older equipment. Nice guys too.  K12computers is discounting
Dell factory-refurbished Optiplexes by $65, I hear.
