Hi Jane,
Congratulations with the release of Edubuntu;
when i discovered about it this week; i immediately thought of the
Catalan project Click, which is also made in a Java flavor, which should
workout fine in a Edubuntu

This is already very well developed software over the last 5 years and
the nice thing is educators can make new material themselves and this is
shared around an existing user group; you should get in touch with these
people, who are very dedicated and motivated in the same line as i
guess/know your are.
