Chris,
There are a few screen recording tools for Linux that I'm aware of:
vnc2swf (records as flash and a bit tricky, but it can also just about 
do audio as well)
wink (records as flash and freeware, rather than opensource)
Istanbul (records as ogg video, and is on the applications list for 
edubuntu)
