Yeah, it changed in recent versions. I explicitly disabled signing in my
reply to Daniel to show that Thunderbird isn't the one responsible.

I'm using Enigmail 0.95.6 with TBird 2.0.0.16. Certainly GPG isn't the
one translating the > into |, and TBird isn't doing it, so I'm stuck
thinking Enigmail is the culprit.

It seems it has to do with the "Allow Flowed Text" setting. At least
according to this thread:

I was going to try disabling it for this message, but their preferences
dialog has changed, and it doesn't seem to be giving that option (at
least not directly). So I went into about:config and disabled the
"format_flowed" settings I could find. We'll see.
